Sweet and Spicy Chicken
This was our dinner Monday night. Yum yum.


I found a recipe online that looked amazing but decided to make some changes to it that I knew the hubs and I would enjoy. I included the link to the original recipe at the bottom of the post. Also, when I add to recipes, I don't really measure I just keep adding things until I like the balance of flavors.

Ingredients:
2 boneless skinnless chicken breasts
3/4 cup of chicken broth
1/4 cup honey
1/4 sesame seeds
2 tablespoons brownsugar
1 to 2 tablespoons soy sauce (to your taste)
red pepper flakes (Go on what your family will want. I added maybe a tablespoon or less) 
1 teaspoon cornstarch

Directions:
Cut your chicken into bite size pieces. Add both your chicken and broth to a skillet. Bring to boil. Let your chicken cook through.
After chicken is cooked, add the remaining ingredients into the skillet. Taste along the way to make sure it's not too spicy for your family if you are using the red pepper flakes.
Continue to let the mixture cook until the chicken begins to brown and the sauce begins to thicken.

We served this with some white rice. A quick fix if you're wanting some take out!! Also, this was made for just my husband and I. If you're cooking for more, adjust the recipe for one chicken breast per person and make extra sauce.

Panko Pork Chops w/ Jalapeno Peach Jam
We eat a lot of pork chops in our house so we're always looking for a new recipe to jazz it up. I came across this one on Pinterest and thought it was worth a shot. Now, I can't stand peach but I thought with the jalapeno added in I might like it. Boy was I right!!!

 
The hubs made the pork chops and I made the jam. Just a note, I used can peaches but the recipe calls for fresh peaches. It was just as delicious.

Jalapeno Popper Chicken Dinner
This was so amazing!!!!! I didn't take any pictures of how yummy our dinner looked but this is a picture from the website!!!! Look at that cheese ooze out of the chicken!!! This dinner just became a regular in our house!!!

Jalapeno Popper Chicken

Spinach Tomato Cavatappi
It's whats for dinner!! :)

 
Ingredients:
16oz Cork screw cavatappi
14.5 oz can of diced tomatoes with garlic and onion
1 cup chopped fresh spinach
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 dried basil
1 teaspoon minced garlic
2 tablespoons flour
1 cup milk
1 tablespoon melted butter

Directions:
Cook pasta according to package.
Drain pasta. (I let my pasta drain as I use the same pot for the sauce)
Combine the tomatoes, spinach, salt, pepper, basil and garlic in a large saucepan over medium heat. Cook and stir until the mixture begins to bubble.
Whisk together milk, flour, and butter. Stir mixture into sauce.
Heat through and let thicken.
Mix in with pasta.

Mug Cakes
